Hello friends I hope you are
well and staying healthy! Today I am so excited to share five different
vegetarian lunch ideas and all of these recipes are lunchbox friendly so you can
pack them up for work or school or if you're just running around on the go so
I really hope you enjoy them and who it's really easy to kind of get in a
lunch or meal ideas right where you're just making the same thing over and over
again so I hope these recipes provide some inspiration so you can hire some
new yummy recipes so let's just get right into it so first up we have a
classic sandwich but it is a vegetarian one and by the way I will be putting all
the ingredients for all five of these recipes in the description below for
your convenience so you can just screenshot it and refer to it next time
you're at the grocery store but for this sandwich it really is so simple but it's
seriously one of my favorite go-to lunches because it is so delicious and
I'm such a bread lover so I mean two slices of bread is such a happy
situation for my taste buds so I like to start by spreading some hummus and you
can do whatever kind of hummus you'd like and then some Mayo and you can not
add mayo or mustard or whatever just customize it to what you like and then I
actually love mustard so I put some Dijon mustard and then I just sliced up
some avocado and I added that to the sandwich as well
avocado is such an incredible superfood so I love to squeeze it in whenever I
can and I also added some pieces of romaine lettuce for a nice little crunch
and some of my other favorite things to top on my sandwich are banana peppers
cucumbers cherry tomatoes and some cheese the cheese really just
elevates this sandwich so so much but I guess I am a little biased because I am
an absolute cheese lover and again you really can just add as many veggies as
you want this is such a great little meal if you have some extra veggies
about to expire in your fridge you can just get creative and top it off but I
definitely wanted to share this recipe because as someone who primarily eats
plant-based and vegetarian I kind of forget about sandwiches because I just
kind of think of them as like having deli meat and stuff but they really do
taste so delicious vegetarian and if you want to add some extra protein you could
even do a hard-boiled egg which would be super super yummy next up we have one of
my recent faves and this is a taco salad this is such a refreshing meal and I
just love it for the spring and summer months coming up so you're gonna need
one romaine heart per serving and then I also like to add in black beans crushed
tortilla chips some lime juice cherry tomatoes again with the avocado and some
cheddar cheese and corn and you can use canned corn or corn on the cob whichever
is easiest for you and then for the dressing we're gonna take some apple
cider vinegar Dijon mustard olive oil and salt and pepper and I really do
eyeball the dressing and I'll kind of taste it as I go and I'll pour it into
my salad mix it around a little bit and then if I need to make more dressing
I'll just kind of repeat the steps but in the description I'll add a little bit
more approximate measurements but I really do recommend like as you start to
cook more just to kind of taste as you go along because you know your taste
buds will vary and I personally don't like a ton of dressing on my salad so if
you are someone who really really loves a lot of dressing you are gonna want to
make a little more oh and I also love to squeeze in the fresh lime juice
you can either squeeze it directly on your lettuce or
you can incorporate it into the dressing so I just chopped my romaine lettuce and
I like to chop it into little bitty pieces because it just is easier to chew
and then I have to my cherry tomatoes and then I took my corn off my cob I've
been loving fresh corn because it's so sweet and crispy so I've actually
preferred that to the canned corn it is a bit more time consuming so if you want
to be a little more efficient the canned corn is really really great but the
fresh corn is also a great option especially if you have a little bit more
time to make this and then I just put my avocado my cheese my tortilla chips and
then topped it with my fresh yummy dressing the first time I made this I
was so surprised that Dijon mustard was an ingredient and paired so nicely with
taco salad but now that I know it seriously is a go-to and again as a
mustard lover I am happy to add mustard it has many recipes as possible but if
you don't like mustard you could also just top your taco salad with a premade
dressing that you can just grab at your grocery store okay next up we have pesto veggie pasta
and you're just gonna need some kind of macaroni put some cherry tomatoes once
again and I actually made my pesto from scratch so I had a lot of other
ingredients but if you want to kind of simplify this recipe you can just buy
your pasta your Tomatoes your mozzarella and then just buy a premade pesto too
again just kind of make it a lot more simple but I had never made pesto before
so I was up for the challenge and I recently got this beautiful basil plant
so I thought it would be a great use of the basil leaves so I made pesto and I'm
gonna show you how I did that today but again you can just grab a little
container of it the next time you're at the store if you don't feel like making
it so for the pesto I needed some basil leaves some pine nuts and walnuts you
can also use almonds instead and I also needed olive oil fresh lemon juice two
cloves of garlic salt and pepper and then also some parmesan and we're also
going to add some mozzarella to our pasta so for the pesto first things
first I stripped my basil plant of its leaves because when you make pesto you
need a lot of basil leaves and then I just added all my ingredients to my
blender it would have been better if I had a food processor because my blender
was a bit too big for my ingredients but it ended up working out just fine it
just would have been a bit easier if I had a smaller machine to work with and
then once I blended up my pesto it smelled seriously amazing it smelled
like five-star Italian restaurant so again if you have some extra time I
think it is a fun adventure to make some fresh pesto it's very rewarding but yeah
once that was finished I just added that to my macaroni and I just had my
macaroni cold and if you are packing this lunch for work or school like
theirs it tastes really good cold so if you don't have access to a microwave or
anything like that this is perfect but if you did want to warm it up that works
too and then I just sliced my mozzarella and tomatoes and kind of mix it all
together and then you can add some sea salt or freshly ground pepper
tastehh okay next we have our Greek veggie quinoa and this is one of my
favourite recipes that I used to make seriously almost every week in college
it is so yummy so simple and such a great thing to make in bulk and then
just keep in your fridge especially if your meal planning or meal prepping and
you want something easy you can put in a to go container to take to the office so
I just cooked my quinoa and I made one cup and then I topped it with some feta
cheese and then garbanzo beans garbanzo beans are so healthy for you so I love
to incorporate these in a couple different meals a week and then it kind
of just mix those together and then I added in my sliced cucumbers cherry
tomatoes and then I squeezed some fresh lemon juice on top and you kind of just
mix it all together so all the flavors can be incorporated and this tastes
really good on its own but it is a bit plain so I like to add a little more oil
and dressing so I just took one clove of garlic that I chopped up and I poured in
some olive oil and sprinkled in some oregano and fresh ground pepper and also
some sea salt and some garlic powder I also added some apple cider vinegar
because I just love the taste of a little vinegar with olive oil and apple
cider vinegar has so many health benefits so I figured why not and then I
also squeezed a bit more lemon juice and again you are just gonna want to take a
little lick of your spoon to see if you like the flavor but this is a pretty
simple dressing and it's really yummy and then I just pour that on top of my
Greek quinoa salad I'm gonna get the garlic cloves and just be aware that
whenever you eat fresh raw chopped garlic you are going to have garlic
bread so consider this your warning but it's really healthy and delicious okay final recipe I would be remiss if I
did not share my lentil soo if you watch my channel you know how much I love my
lentils and this is one of my seriously I've been saying this about every recipe
pretty much but this one is my go-to my husband and I we just love this
recipe and again this is another great one to make in bulk and you just keep it
in your fridge and you can grab it real quick when you're having a busy day but
you already have a fresh yummy lunch prepared so it's really awesome and the
first thing you do is I cook it in a Dutch oven but you can do it in a crock
pot or a pot and you just saute it your onions for a bit and then you add in
your garlic and I actually have been adding in two carrots as well and some
green pepper just to add a bit more veggies and so I added that in and then
my vegetable broth but if you want to use chicken broth or some kind of meat
broth that is totally fine as well you can customize it as you wish and then I
adding my lentils and then okay go crazy with the spices so again I'm gonna leave
the recipe in the description because there seriously are so many spices but
if you don't have all these spices again you can omit some and if you're not a
spicy food lover you would probably want to leave some spices out anyways because
this is an incredibly flavorful and spice filled recipe and to top it off I
love to add some plain Greek yogurt and some chopped onion and it is truly so so
creamy and delicious and filling and nutritious so everything you would hope
for your lentil soup and that's it I really hope you enjoyed
