Vet [Romaine Salad with Plum-Ginger Dressing]

Arthur the baby poodle went to the vet for his second round of shots yesterday morning.

He was a bit scared on the way in, but overall it went great. He even found a cat to play with.

A couple of hours after the fact Arthur got downright shrieky, though. I guess his shoulder was sore at the injection site.

The vet must just have got him in the muscle a bit because he seems fine this morning.

He’s back to doing his favourite things, including:

1. Playing in the park with his best doggy friends Izzy the Boston Terrier and Hazel the longhaired miniature Dachshund.

2. Hugging the cold porcelain toilet on hot days.

3. Eating bones.

4. Chewing hair.

5. Eating books and paper.

6. Climbing in the fridge.

7. Getting sprayed in the face with a spray bottle.

8. Receiving confirmation that he’s a good boy over and over.

Puppies take up a lot of time.

Training and loving Arthur takes about 6 hours a day.

That doesn’t leave too much time for cooking, so I’ve been making lots of salads.

Romaine Salad with Plum Ginger Dressing

For the dressing:
3 red plums, pitted and quartered
1 small shallot, peeled and sliced
2 inches fresh ginger, peeled and thinly sliced crosswise
2 tbs. white miso
1 ½ tsp. sugar
1 tbs. rice vinegar
2 tbs. sesame oil
¼ cup canola oil
Salt and fresh-ground black pepper, to taste

For the salad:
2 Romaine lettuce hearts, roughly chopped
4 small radishes, thinly sliced
1 Kirby cucumber, peeled, sliced lengthwise and thinly sliced crosswise
1 ripe avocado, pitted, peeled and cut into ½ -inch cubes
Salt and fresh-ground black pepper, to taste

In a blender or food processor, combine all the ingredients for the dressing, except the oil. Puree until smooth and slowly drizzle in the oil until emulsified. Season with salt and pepper

In a large bowl, add the romaine, radishes, cucumber and avocado. Toss with half the dressing and season with salt and pepper.

If desired, add remaining dressing or serve alongside.
